An Earth Sheltered House generally means one that has earth on some or all of the side walls. and also on top, the earth forming part of the total roofing. This is in contrast with an earth bermed house where some or all of the side walls have earth against them, but the roof has none, thus losing the benefits of earth insulation for the roof (which is significant).
